180g block dark chocolate, chopped
110.55 gm golden syrup
250g butter, chopped
Instructions:
Prepare your 20cm x 30cm lamington pan by greasing it and lining the base and sides with baking paper, leaving a 3cm overhang on all sides.
In a large bowl, mix biscuits, Turkish Delight, and pistachios. In a microwave-safe bowl, combine milk chocolate, dark chocolate, golden syrup, and butter. Microwave on medium (50%) for 2 to 3 minutes, stirring every 30 seconds with a metal spoon until smooth.
Mix the chocolate mixture into the biscuit mixture and then transfer to the prepared pan. Use the back of a spoon to press it down evenly. Cover and refrigerate for 2 hours until it sets. Cut into squares and serve.
