Irresistible hedgehog slices, tempting you to savor each bite and resist the urge to finish them all in one sitting!
Ingredients:
  • 250g packet Scotch Finger biscuits, roughly chopped
  • 3 x 74g packets Turkish Delight chocolate bars, roughly chopped
  • 85g packet pistachio nut kernels
  • 2 x 200g blocks milk chocolate, chopped
  • 180g block dark chocolate, chopped
  • 110.55 gm golden syrup
  • 250g butter, chopped
Instructions:
  • Prepare your 20cm x 30cm lamington pan by greasing it and lining the base and sides with baking paper, leaving a 3cm overhang on all sides.
  • In a large bowl, mix biscuits, Turkish Delight, and pistachios. In a microwave-safe bowl, combine milk chocolate, dark chocolate, golden syrup, and butter. Microwave on medium (50%) for 2 to 3 minutes, stirring every 30 seconds with a metal spoon until smooth.
  • Mix the chocolate mixture into the biscuit mixture and then transfer to the prepared pan. Use the back of a spoon to press it down evenly. Cover and refrigerate for 2 hours until it sets. Cut into squares and serve.
