Slow-simmered red beans and rice with savory ham hock and spicy sausage for a flavor-packed, hearty meal.
Ingredients:
  • 2 cups dried red beans
  • 1 tablespoon dried minced onion
  • 0.5 teaspoon dried minced garlic
  • 2 teaspoons salt
  • 1 teaspoon white sugar
  • 1 teaspoon celery seed
  • 1 teaspoon ground cumin
  • 0.25 teaspoon ground cayenne pepper
  • 0.25 teaspoon crushed red pepper flakes
  • 1 bay leaf
  • 1 ham hock
  • 1 pound smoked sausage, sliced
Instructions:
  • Inspect the dried beans and let them soak in water overnight.
  • The following day, discard the soaking water and transfer beans to a large pot or slow cooker. Fill with water and mix in dried onion and garlic. Season with salt, sugar, celery seed, cumin, cayenne pepper, red pepper flakes, and bay leaf. Place ham hock into the pot and submerge it into the beans. Bring to a boil, then lower the heat and simmer gently for 3 to 4 hours.
  • Add the smoked sausage and let it simmer for an additional 20 minutes before serving.
