Tangy feta cheese, grilled onions, bell peppers, and peppery arugula combine for a flavorful salad side dish.
Ingredients:
  • 2 large red bell peppers
  • 2 medium red onions, cut crosswise into 1/2-inch slices
  • Extra-virgin olive oil
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 1/2 teaspoons finely chopped garlic
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • 6 cups torn arugula
  • 1/2 cup coarsely chopped walnuts, toasted
  • 1 cup crumbled feta cheese (4 oz)
Instructions:
  • Preheat your gas or charcoal grill. Slice bell peppers into quarters and remove stems, seeds, and membranes. Lightly brush onion slices with oil before grilling.
  • Grill the pepper wedges skin side down along with the onions on medium heat, cover and cook for about 10 minutes. Remember to turn them occasionally until the pepper skins are completely blackened and blistered, and the onions are tender.
  • After setting the onions aside, transfer the pepper wedges to a medium bowl and cover it tightly with plastic wrap. Allow it to cool for 5 minutes. Peel off the blackened skin, rinse them quickly with water, then cut the peppers into strips. Finally, return the peppers to the bowl and mix in the onions.
  • Combine 1/4 cup oil, vinegar, garlic, salt, and pepper in a small bowl, whisk together. Toss onion mixture with 2 tablespoons dressing. In a large bowl, coat arugula with the rest of the dressing. Finish with onion mixture, walnuts, and cheese. Serve promptly.
