Elegant roasted red pepper and chicken broth soup - quick, easy, and delicious!
Ingredients:
  • 1 (12 ounce) jar roasted red bell peppers
  • 1 (13.75 ounce) can low-sodium chicken broth
  • 1 teaspoon minced garlic
  • 0.75 teaspoon dried oregano
  • 0.125 teaspoon dried basil
  • 1 cup heavy cream
  • 0.5 cup crumbled feta cheese
Instructions:
  • Blend together the undrained peppers, chicken broth, garlic, oregano, and basil in a food processor or blender until a smooth consistency is achieved.
  • Pour the liquid into a saucepan and gently warm over medium-low heat. Let it simmer for 5 minutes. Gradually whisk in the cream and heat until warmed through.
  • To serve, ladle the soup into bowls over a bed of crumbled feta cheese. Sprinkle with extra feta cheese and oregano for a flavorful garnish.
