Deliciously moist red velvet brownies with cream cheese swirl for red velvet cake fans.
Ingredients:
  • 1 cup white sugar
  • 0.5 cup unsalted butter, melted
  • 0.25 cup unsweetened cocoa powder
  • 1 ounce red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • 0.25 teaspoon salt
  • 2 large eggs, slightly beaten
  • 0.75 cup all-purpose flour
  • 1 (8 ounce) package cream cheese at room temperature
  • 0.25 cup white sugar
  • 1 large egg
  • 0.25 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease an 8x8-inch baking pan.
  • In a large mixing bowl, combine 1 cup sugar with melted butter. Add cocoa, red food coloring, 1 teaspoon vanilla extract, vinegar, and salt one by one, stirring well after each addition to ensure a smooth mixture. Incorporate 2 eggs until fully combined.
  • Combine flour with cocoa mixture, stirring gently until just mixed. Reserve 1/4 cup of the batter. Pour the rest of the batter into the baking dish.
  • In a bowl, cream the fluffy cream cheese using an electric mixer on medium speed. Mix in 1/4 cup sugar, 1 egg, and 1/4 teaspoon vanilla extract until smooth with minimal lumps, about 3 to 4 minutes.
  • Drop spoonfuls of creamy and rich cream cheese mixture on top of the batter in the pan, then gently level the dollops with a knife or offset spatula. Be careful not to mix too much. Pour the reserved 1/4 cup of batter over the cream cheese dollops, then run a knife or skewer through the batter and cream cheese mixture to make appealing swirls.
  • Bake in the preheated oven for 30 to 35 minutes until the top is dry and the edges begin to pull away from the sides of the pan. Allow it to cool completely before cutting into bars and store them covered in the refrigerator.
