Indulge in juicy beef ribs with creamy mashed potatoes and fresh steamed greens.
Ingredients:
  • 250ml red wine
  • 250ml beef stock
  • 16.00 gm brown sugar
  • 1 brown onion, coarsely chopped
  • 1 carrot, halved, cut into 2cm pieces
  • 1 celery stick, cut into 2cm pieces
  • 3 rosemary sprigs
  • 2 dried bay leaves
  • 4 garlic cloves
  • 1.2kg Beef Ribs
  • 7.50 gm cornflour
  • Mashed potato, to serve
Instructions:
  • Preheat the oven to 180C.
  • In a large baking dish, mix together the wine, stock, sugar, onion, carrot, celery, rosemary, bay leaves, and garlic. Place the ribs in the dish and make sure they are well coated. Cover the dish tightly with foil and bake for 2 hours or until the ribs are tender.
  • Strain ribs and vegetables from wine mixture and keep them warm under a cover. Transfer cooking liquid to a small frying pan. Mix cornflour and 1 tbs water in a small bowl, then whisk into the cooking liquid. Simmer over medium heat, stirring constantly, until the sauce thickens, about 1 minute.
  • Plate ribs drizzled with a rich red wine sauce alongside creamy mashed potatoes and perfectly steamed greens.
