Indulge guilt-free with these delicious apple nutmeg muffins - a satisfying treat for the health-conscious.
Ingredients:
  • 225.00 gm self-raising flour
  • 50g polyunsaturated margarine
  • 107.50 gm caster sugar
  • 128.75 gm reduced-fat milk
  • 1 egg, lightly beaten
  • 425g can pie apple, coarsely chopped
  • 1/4 tsp nutmeg
  • 5.00 gm toasted oats (see note)
  • 6 scoops low-fat vanilla ice-cream
Instructions:
  • Preheat the oven to 180°C and prepare a 6-hole Texas muffin tin or a 12-hole regular muffin tin by greasing the cups.
  • In a large bowl, gently sift in the flour. Add margarine and rub it in with your fingertips until the mixture looks like fine breadcrumbs. Mix in the sugar. In a separate bowl, combine the milk, egg, and 1 cup of pie apple. Gently fold this mixture into the flour mixture, being careful not to overmix (the batter should still have lumps).
  • Place the mixture in the pan. Finely chop the remaining pie apple and sprinkle it over the muffins. Mix nutmeg, sugar, and oats together and sprinkle over the muffins.
  • Bake 3/4-cup muffins for 30 to 35 minutes or 1/3-cup muffins for 20 to 25 minutes until a skewer comes out clean. Enjoy warm with ice cream.
