Low-fat, fruity cheesecake: guilt-free and delicious.
Ingredients:
  • 100g reduced-fat margarine spread
  • 40.00 gm caster sugar
  • 125.00 ml plain flour
  • 20.00 gm custard powder
  • 2 tsp finely grated lime rind
  • 86.63 gm lime juice
  • 220g extra-light cream cheese, softened
  • 400g fresh reduced-fat ricotta cheese
  • 3 passionfruit, halved
Instructions:
  • Preheat your oven to 160°C/140°C fan-forced, then generously grease a 6cm-deep, 22cm round springform pan and line the base and sides with baking paper.
  • Use a wooden spoon to blend together spread, sugar, flour, and custard powder in a bowl. Transfer to a lightly floured surface and knead until smooth. Press the mixture evenly over the base of a pan. Prick it with a fork, then bake for 25 minutes until lightly golden. Allow it to cool for 30 minutes.
  • Prepare the filling by blending lime rind, lime juice, cream cheese, ricotta, sugar, and eggs until the mixture is smooth. Spread this over the base, then top it with a drizzle of passionfruit pulp. Bake for 35 minutes until the filling is just set. Let it cool for 2 hours in the oven with the door slightly open. Once cooled, cover and refrigerate for 4 hours or overnight, if preferred. Serve and enjoy!
