Ingredients:
  • 210g can red salmon, drained, skin and bones removed, flaked
  • 125.00 ml frozen baby peas
  • 4 green onions, thinly sliced
  • 20.00 ml chopped fresh dill
  • 1 tsp finely grated lemon rind
  • 4 sheets filo pastry
  • Alfa One rice bran oil cooking spray
  • 4 eggs
  • 64.38 gm reduced-fat milk
  • 40.00 ml finely grated parmesan cheese
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and lightly grease a 2.5cm deep, 11.5cm x 34cm loose-based fluted tart pan.
  • Combine the salmon, peas, onion, dill, and lemon rind in a bowl, and mix well.
  • Lay down one sheet of filo pastry on a flat surface and generously spray with oil. Continue layering the remaining filo sheets with oil, then line the base and sides of the pan with the filo. Finally, spoon the salmon mixture over the prepared filo.
  • In a bowl, combine eggs, milk, and Parmesan, then whisk together. Pour mixture over salmon. Fold overhanging filo sides, then bake for 35 minutes, or until golden and set. Serve alongside salad leaves.
