Decadent adult-only refrigerator fudge slice.
Ingredients:
  • 150g pitted prunes, roughly chopped
  • 80ml sherry
  • 250g digestive biscuits, chopped
  • 100g pecans, chopped
  • 100g unsalted pistachios, chopped
  • 15 (about 50g) glace cherries
  • 150g unsalted butter, chopped
  • 140g golden syrup
  • 500g dark chocolate, chopped
  • Cocoa, to dust
Instructions:
  • Cover the sides of a 25cm x 10cm loaf pan with plastic wrap, allowing for overhang.
  • Combine the prunes and sherry in a small bowl, allowing them to soak for 2-3 hours.
  • Mix the biscuit, nuts, and cherries in a bowl. Melt the butter, golden syrup, and chocolate in a heatproof bowl over a saucepan of simmering water, stirring gently until chocolate is melted. Remove from heat.
  • Combine the biscuit mixture, prunes, and soaking liquid in a bowl, stirring until well mixed. Press the mixture firmly into the loaf pan to remove air bubbles, cover with plastic wrap, and chill for at least 4 hours or preferably overnight until set.
  • Place the dessert onto a beautiful platter, sprinkle with cocoa powder, and slice into 2cm-thick pieces before serving.
