Crispy German potato pancakes served with applesauce make a quick and satisfying weeknight meal.
Ingredients:
  • 20 medium potatoes
  • 1 large onion, finely chopped
  • 1 large egg
  • 5 tablespoons rolled oats, or more as needed
  • 4 tablespoons oil, or more as needed
  • salt and freshly ground black pepper to taste
Instructions:
  • Peel and finely grate the potatoes. Place the grated potatoes on a clean kitchen towel, twist to close, and gently squeeze out excess moisture, retaining a slight level of dampness.
  • Combine the mashed potatoes, onion, egg, oats in a large bowl, and season generously with salt and pepper to taste.
  • In a large skillet, heat oil. Using 2 spoons, shape small potato pancakes out of the mixture and place them in the hot oil. Cook until golden brown, 3 to 5 minutes per side, adding more oil if needed. Drain on paper towels before serving.
