Try these irresistible crunchy pecan cookies, a cherished family recipe.
Ingredients:
  • 3 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup butter, softened
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 cup chopped pecans
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease baking sheets.
  • Combine and sift the flour, baking soda, and salt in a bowl. In a separate large bowl, cream together the butter, 1 cup of white sugar, and brown sugar until smooth. Beat in the eggs and vanilla extract until well combined. Stir in the sifted flour mixture, then mix in the pecans.
  • Scoop the dough onto the baking sheets, leaving 2 inches of space between each. Put 1/2 cup of white sugar in a shallow bowl. Dampen the bottom of a glass with a wet cloth, then dip it into the sugar. Press the cookies flat with the sugared glass, re-dipping in sugar for each cookie.
  • Bake in the preheated oven for 9 to 12 minutes or until lightly browned. Let them cool on the sheets for a minute or two before transferring to racks to finish cooling.
