The ultimate anytime hangover cure: Breakfast, lunch, or dinner approved.
Ingredients:
  • 250 g basmati rice
  • 4 large free-range eggs
  • 2 lemons
  • 2 fresh bay leaves
  • 500 g undyed smoked haddock fillets skin off, bones removed
  • 1 knob of butter
  • 1 onion finely chopped
  • 1 small bunch of fresh coriander leaves picked, stalks finely chopped
  • 1 red chilli deseeded and finely sliced
  • 1 heaped tablespoon Madras curry paste
  • lemon wedges
  • natural yoghurt
  • chilli sliced
Instructions:
  • Bring 2 large saucepans of salted water to a boil. Rinse the rice until the water runs clear. Cook the rice for 2 minutes less than instructed. In the other pan, add the eggs, bay leaves, and juice of half a lemon. Let simmer for 7-8 minutes, adding the haddock halfway through. In a separate pan, heat oil and butter, then sauté onion, coriander stalks, and chili. Add curry paste, cook for 5 minutes, then remove from heat. Mix in the cooked rice, flaked haddock, chopped eggs, coriander leaves, and lemon juice. Heat for 5 minutes, adjust seasoning, fold gently. Remove from heat, top with coriander, and serve with lemon wedges, yogurt, and sliced chili. Enjoy with a pint of Guinness with a splash of port.
