Silken kebabs marinated and braised to perfection, a traditional Muglai Indian dish. Ideal with chicken, beef, lamb, prawns, or scallops.
Ingredients:
  • 1 lemon, juiced
  • 6 almonds
  • 6 jalapeno peppers, seeded and chopped
  • 8 cloves garlic
  • 1 inch piece fresh ginger root, peeled
  • 1 cup chopped fresh cilantro
  • 0.5 cup heavy cream
  • 2 pounds skinless, boneless chicken breast halves - cut into 1 1/2 inch pieces
  • 2 tablespoons butter
Instructions:
  • Soak almonds in water for 15 to 20 minutes, then drain. Process soaked almonds, peppers, garlic, ginger, and cilantro in a food processor until smooth. Season with salt, lemon juice, and cream.
  • Transfer the mixture to a spacious non-metallic bowl. Add chicken to the bowl and ensure it is evenly coated. Cover and let it marinate in the refrigerator for 24 hours.
  • Heat up the grill until it's super hot and brush the grate with a light coating of oil. Take the meat out of the marinade and skewer it.
  • Coat the meat with butter and place on the hot grill. Cook the chicken slowly until it's done.
