Indulge in a delicious pork pie bursting with flavor from savory ground pork, mushrooms, celery, and a blend of herbs and spices.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 pounds ground pork
  • 1.5 cups beef stock
  • 3 small onion, chopped
  • 2 cups fresh sliced mushrooms
  • 3 cloves garlic, minced
  • 1 cup chopped celery
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon dried savory
  • 0.25 teaspoon ground cloves
  • 1 cup fresh bread crumbs
  • 0.5 cup chopped parsley
  • 1 recipe pastry for a 9 inch double crust pie
  • 1 egg
  • 1 teaspoon water
Instructions:
  • Heat oil in a large skillet over medium-high heat. Cook pork, stirring occasionally to break it up, for around 10 minutes or until cooked through and no longer pink. Drain any excess fat.
  • Combine stock, onions, garlic, mushrooms, celery, salt, cinnamon, pepper, savory, and cloves in a pot and bring to a boil. Lower the heat to medium-low and let it simmer for 35 to 45 minutes until 2 tablespoons of liquid remain. Add fresh bread crumbs and parsley. Taste and adjust seasoning as needed. Chill the filling covered in the refrigerator for up to one day.
  • Preheat oven to 375°F (190°C) for perfect baking results.
  • Roll out the pastry thinly and evenly, then gently place it in the pie plate. Fill the shell with the delicious filling. Roll out the remaining pastry for the top crust. Use water to moisten the edge of the bottom crust. Carefully place the top crust over the filling and press the edges to seal. Create a decorative crust edge by trimming and fluting. Mix the egg with water and brush it over the top crust. Lastly, create steam vents on the top crust.
  • Bake in a preheated oven until the pastry turns a lovely golden brown, approximately 45 minutes. Let it cool for around 10 minutes before digging in.
