Delicious rhubarb cheesecake bars with a sweet and tangy filling on a wholesome oat crust.
Ingredients:
  • 1 serving cooking spray
  • 1 cup old-fashioned oats
  • 1 cup brown sugar
  • 0.125 teaspoon ground cinnamon
  • 0.5 cup cold unsalted butter
  • 2 (8 ounce) packages cream cheese, softened
  • 2 cups white sugar
  • 2 large eggs
  • 1 teaspoon vanilla butter and nut flavoring
  • 2 cups thinly sliced rhubarb
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking pan with cooking spray.
  • In a bowl, mix flour, oats, brown sugar, and cinnamon. Add butter and blend until mixture is crumbly. Press most of the mixture into the pan to make a crust, saving 1/3 cup for later.
  • In a bowl, combine cream cheese, sugar, eggs, vanilla extract, vanilla butter, nut flavoring, and cinnamon until smooth. Gently fold in rhubarb. Pour the mixture onto the crust and sprinkle with the reserved crumble.
  • Bake at the set temperature until a toothpick or knife inserted in the center comes out clean, about 45 to 50 minutes. Allow it to cool completely before cutting into squares.
