Prep rhubarb in advance, layer, and enjoy an effortless dessert.
Ingredients:
  • 500g rhubarb, trimmed, cut into 4cm-pieces
  • 50g (1⁄4 cup) coconut sugar
  • 1 orange, rind finely grated, juiced
  • 500g vanilla coconut yoghurt
  • Pistachios, chopped, to serve
  • Coconut chips, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced. Combine rhubarb, sugar, rind, and juice in a baking dish. Bake covered with foil for 20 minutes until rhubarb is tender. Let it cool.
  • In each of the four 250ml (1 cup) glasses, alternate layers of rhubarb and yogurt. Top with pistachios and coconut chips.
