Delectable rhubarb pie with fluffy meringue in a square pan.
Ingredients:
  • 0.5 cup margarine
  • 2 tablespoons confectioners' sugar
  • 1.5 cups white sugar
  • 3 tablespoons all-purpose flour
  • 3 egg yolks
  • 0.33300000429153 cup milk
  • 3.5 cups chopped rhubarb
  • 3 egg whites
  • 0.25 cup white sugar
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Combine 1 cup flour, margarine, and confectioners' sugar in a large bowl until a ball forms. Press into a 9-inch square pan and bake in a preheated oven until golden brown, about 20 minutes.
  • Combine 1 1/2 cups of sugar, 3 tablespoons of flour, yolks, and milk in a saucepan. Stir until well mixed, then add chopped rhubarb. Cook, stirring constantly, until mixture thickens. Pour into a hot crust.
  • Using a large glass or metal mixing bowl, whip egg whites until foamy. Slowly incorporate 1/4 cup sugar until stiff peaks form. Cover rhubarb filling entirely with the meringue.
  • Place the dish in the oven and bake until it turns a beautifully golden brown, typically 10 to 15 minutes.
