Deliciously tangy rhubarb and sweet strawberries compote, perfect for topping ice cream or pancakes.
Ingredients:
  • 3 cups chopped rhubarb
  • 0.5 cup white sugar, or more to taste
  • 2 teaspoons vanilla sugar
  • 0.5 cup apple juice
  • 1 tablespoon cornstarch
  • 1 teaspoon water, or more as needed
  • 3 cups halved fresh strawberries
Instructions:
  • In a pot, mix rhubarb, sugar, and vanilla sugar, and let it marinate for 30 minutes. Then add apple juice and bring to a gentle boil. Cook on low heat until the rhubarb is soft, for about 4 to 5 minutes.
  • Mix cornstarch with water, then combine with rhubarb. Boil, cool completely, then add strawberries before serving.
