Elevate your BBQ with a refreshing and tangy rice salad bursting with fruity flavors!
Ingredients:
  • 200.00 gm white long-grain rice
  • 2 celery stalks, trimmed, finely chopped
  • 1 small red capsicum, finely chopped
  • 2 green onions, thinly sliced
  • 85.00 gm sultanas
  • 165.00 ml dried diced apricots
  • 82.50 ml slivered almonds, toasted
  • 21.00 gm lemon juice
  • 20.00 ml white wine vinegar
  • 2.50 gm curry powder
  • 5.00 gm caster sugar
Instructions:
  • Prepare the rice according to the package instructions in a saucepan of boiling salted water until tender. Drain and rinse under cold water until cool.
  • Mix together rice, celery, capsicum, onion, sultanas, apricots, and almonds in a bowl. In a screw-top jar, combine olive oil, lemon juice, vinegar, curry powder, sugar, salt, and pepper. Close the lid tightly and shake well to blend all the flavors together.
  • Drizzle the fragrant oil mixture over the fluffy rice, toss gently to mix, and elegantly serve.
