Gluten-free rice waffles made with rice flour, tapioca starch, and almond flour - perfect for brunch lovers avoiding wheat.
Ingredients:
  • 2 eggs, separated
  • 1.75 cups rice milk
  • 1 cup rice flour
  • 0.75 cup modified tapioca starch
  • 0.5 cup canola oil
  • 0.25 cup almond meal
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon vanilla extract
  • cooking spray
Instructions:
  • Preheat waffle iron as per manufacturer's guidelines.
  • Whip egg whites in a glass, metal, or ceramic bowl using an electric mixer until stiff peaks are achieved.
  • In a separate bowl, use a hand beater to whisk egg yolks. Mix in rice milk, rice flour, tapioca starch, oil, almond meal, sugar, baking powder, vanilla, and salt until smooth. Gently fold in stiff egg whites until combined.
  • Coat the hot waffle iron with cooking spray. Pour batter onto the iron, close the lid, and cook until waffles are golden and the steaming stops, around 5 minutes per waffle.
