Rich and Creamy Tomato Basil Soup

Creamy tomato basil soup made with fresh tomatoes, basil, heavy cream, and butter.
Ingredients:
  • 4 tomatoes - peeled, seeded and diced
  • 4 cups tomato juice
  • 14 leaves fresh basil
  • 1 cup heavy whipping cream
  • 0.5 cup butter
  • salt and pepper to taste
Instructions:
  • Collect all your delicious ingredients.
  • In a stockpot over medium heat, simmer tomatoes and juice until softened, about 30 minutes.
  • Take the pot off the heat and sprinkle in fresh basil leaves.
  • Blend the soup with an immersion blender until silky smooth.
  • Add the luxurious heavy cream and butter to the mixture. Heat gently over medium heat until the butter is melted, which should take around 5 minutes. Be careful not to let it boil. Finally, season with a pinch of salt and pepper to elevate the flavors.
  • Indulge in this dish while it's still piping hot!
