Indulge in decadent chocolate brownies infused with earthy beets for a unique and delightful twist.
Ingredients:
  • 200g beetroot, peeled, coarsely chopped
  • 175g butter, coarsely chopped
  • 255g (1 1/4 cups, firmly packed) brown sugar
  • 200g 70% cocoa dark chocolate, coarsely chopped
  • 3 eggs, lightly whisked
  • 75g (1/2 cup) plain flour
  • 35g (1/3 cup) cocoa powder
  • 1/4 tsp nutmeg
  • 0.63 gm ground cinnamon
  • 100g (1 cup) walnuts, coarsely chopped
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180C. Grease and line a 20cm-square cake pan with baking paper, leaving some paper hanging over the edges. Finely chop the beetroot in a food processor.
  • Combine beetroot, butter, brown sugar, and dark chocolate in a saucepan over medium-low heat until melted. Transfer to a bowl and stir in the egg. In a separate bowl, mix flour, cocoa powder, nutmeg, and cinnamon, then sift over the chocolate mixture. Add walnuts, transfer to a pan, and bake for 30 minutes. Cool, cut into squares, and dust with icing sugar.
