Succulent rosemary-herbed chicken braised in Marsala wine with portobello mushrooms and onions, crowned with gooey melted mozzarella.
Ingredients:
  • 8 skinless, boneless chicken breast halves
  • 0.5 cup all-purpose flour
  • 1 teaspoon poultry seasoning
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 0.25 cup Marsala wine
  • 1 cup chopped portobello mushrooms
  • 1 cup chopped onion
  • 1 teaspoon dried rosemary
  • 4 slices mozzarella cheese
Instructions:
  • Coat the chicken breasts with seasoned flour. In a skillet, heat butter and oil until sizzling. Fry the chicken in batches for about 5 minutes per side until golden brown and cooked through. Set aside and keep warm.
  • Pour in the aromatic Marsala wine to release all the flavorful bits stuck to the pan. Introduce the chopped mushrooms, onions, and fragrant rosemary. Cook over high heat for 5 minutes, stirring occasionally.
  • Place the chicken breasts back in the skillet, brush with the drippings, sprinkle cheese over them, and cook covered for an additional 2 1/2 minutes. Resist the urge to lift the lid! After cooking, let the chicken rest off the heat for 10 minutes to ensure they are fully cooked. Taste and adjust seasoning as needed. Enjoy the most tender and flavorful chicken breasts ever!
