Try these delicious ricotta and pine nut stuffed cherry tomatoes for a perfect snack.
Ingredients:
  • 300g truss cherry tomatoes
  • 120.00 gm ricotta cheese
  • 62.50 ml grated parmesan, or vegetarian hard cheese
  • 40.00 ml toasted pine nuts, chopped
  • 40.00 ml fresh basil, finely shredded
  • 1 long red chilli, finely chopped
Instructions:
  • Remove the tops from the tomatoes and set them aside. Carefully remove the flesh and seeds using a teaspoon and discard them.
  • Mix together ricotta, parmesan (or vegetarian hard cheese), nuts, basil, and chili. Season generously. Stuff each tomato with the ricotta mixture and put the tops back on. Chill in the refrigerator until serving.
