Ricotta and rocket quesadillas with fried egg

Healthy and flavorful Mexican quesadillas topped with a fried egg and salsa.
Ingredients:
  • 4 pieces wholemeal Lebanese bread
  • 250g fresh low-fat ricotta
  • 40g rocket leaves
  • 4 eggs
  • 1 x 250g punnet cherry tomatoes, quartered
  • 1/2 red onion, finely chopped
  • 1 long fresh red chilli, halved, deseeded, thinly sliced
  • 21.00 gm fresh lime juice
  • Fresh coriander leaves, to serve
Instructions:
  • 1. Preheat the sandwich press while you lay out the bread on a clean surface. 2. Spread the ricotta evenly on one-half of each piece of bread. 3. Add the rocket on top. 4. Fold the bread in half to make a sandwich. 5. Spray with olive oil and place a sandwich on the press. Cook for 2 minutes until golden. 6. Transfer to a plate, cover with foil, and keep warm. 7. Repeat with the rest of the sandwiches.
  • Generously coat a non-stick frying pan with olive oil spray and warm over medium heat. Crack the eggs into the pan and cook for about 3 minutes, or until they reach your desired level of doneness.
  • In a bowl, mix together tomato, onion, chili, chopped coriander, and lime juice. Cut the quesadillas into wedges, then divide among serving plates. Top with eggs, salsa, and coriander leaves before serving.
