Succulent roasted chicken with zesty lemon and kosher salt, effortlessly flavorful.
Ingredients:
  • 1 (4 pound) whole chicken, rinsed
  • 1 lemon, halved
  • kosher salt
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • Place the chicken in a roasting pan, stuff the cavity with lemon halves, and generously sprinkle kosher salt all over the chicken.
  • Roast in the oven until the skin is golden and crispy, juices run clear, and a meat thermometer reads 160°F (70°C) when inserted into the thickest part of a thigh (not touching bone), for approximately 1 hour. Rest the chicken for 15 minutes before carving.
