Whip up a quick and delicious salad for a light and satisfying meal!
Ingredients:
  • 500.00 ml risoni pasta
  • 60ml sherry vinegar
  • 11.80 gm Dijon mustard
  • salt and cracked black pepper
  • 1/2 small red onion, thinly sliced
  • 100g baby rocket leaves
  • 175g button mushrooms, thinly sliced
  • 82.50 ml small basil leaves
  • 250g cherry tomatoes, halved
Instructions:
  • Cook the risoni in a generous pot of boiling water following the package directions until it's perfectly al dente. Then, drain and set aside.
  • Combine the oil, vinegar, Dijon mustard, salt, and pepper and whisk until fully mixed.
  • Combine the risoni, onion, rocket, mushrooms, basil, and tomato. Drizzle over the dressing and gently toss to coat before serving immediately.
