Rita’s famous lasagne recipe

Rita's famous Italian-inspired lasagne, passed down from her grandmother Noni.
Ingredients:
  • 54.60 gm olive oil
  • 1 onion, chopped
  • 6 cloves of garlic, crushed
  • 1kg beef mince
  • 18.00 gm sugar
  • 9.60 gm salt
  • 20.00 ml dried basil leaves
  • 1 beef style stock cube
  • 700g btl Mutti Tomato Passata
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 4 sprigs of rosemary, 8cm long
  • Splash of balsamic vinegar
  • Olive oil spray
  • 250g dried lasagne pasta sheets
  • 490g jar Bechamel sauce
  • 500.00 ml tasty cheese, coarsely grated
Instructions:
  • Preheat the oven to 180C on the fan setting.
  • In a large saucepan, heat olive oil until it starts to sizzle. Add onion and garlic, stirring until onions are translucent. Add mince and cook until browned, stirring frequently.
  • Combine sugar, salt, and basil in the pan, stirring well. Crumble in the stock cube and press it against the base until it dissolves. Pour in the passata and add the tomatoes. Swirl water in the passata jar and tomato can, then pour into the pan. Finally, toss in rosemary sprigs and a splash of balsamic vinegar.
  • Bring the mixture to a boil, cover the saucepan, and let it simmer for 30-60 minutes, stirring occasionally and uncovering halfway through.
  • Prepare Rita's favorite 23cm x 33cm lasagne dish by greasing it with oil. Layer the dish with mince mix, lasagne sheets, mince mix, alternating until the last layer of mince mix. Top with bechamel sauce, spread evenly, then sprinkle cheese over the top before baking.
  • Bake in the oven for 30 minutes. Check doneness by inserting a skewer into the lasagne - it should go through easily when cooked. If not, continue cooking and retest every 5 minutes. Let the lasagne rest for at least 10 minutes before serving.
