Roast almonds with thyme & orange salt

Spiced almonds with herbs and citrus zest.
Ingredients:
  • 245g (1 1/2 cups) blanched almonds
  • 9.20 gm olive oil
  • 1.25 gm sweet paprika
  • 20.00 ml finely grated orange rind
  • 9.60 gm sea salt flakes
  • 20.00 ml chopped fresh thyme
Instructions:
  • Preheat the oven to 180°C. Spread almonds on a baking tray, drizzle with oil, and toss to coat evenly. Sprinkle with paprika and toss again. Bake for 15 minutes until lightly browned. Allow to cool for 20 minutes before serving.
  • Prepare a baking tray with non-stick baking paper and lay out the orange rind. Bake for 10 minutes until dried. Allow to cool, then toss the almonds with the orange rind, sea salt, and thyme.
