Ingredients:
  • 12 small beetroot bulbs, trimmed leaving 3cm of stem intact, peeled
  • 3 oranges
  • 60ml (1/4 cup) olive oil
  • 4 garlic cloves, unpeeled
  • 120g baby rocket leaves
  • 200g goats cheese, crumbled
Instructions:
  • Preheat your oven to 180°C. Arrange the beetroot in a large baking dish, grate the oranges' rind over them, then drizzle with 2 tablespoons of oil. Season with salt and pepper. Add pierced garlic cloves. Bake for 35-40 minutes until beetroot are tender.
  • Prepare the oranges by cutting off the top and base. Use a sharp knife to remove the skin and white pith. Hold each orange over a bowl to catch any juice, then carefully slice along the membranes to extract the orange segments. Squeeze out any remaining juice into the bowl.
  • Distribute rocket, beetroot, and orange segments onto plates, keeping the garlic aside. Top with crumbled goat cheese before serving.
  • Combine the orange juice and remaining oil with the pan juices, then season with salt and pepper. Drizzle the mixture over the salad and garnish with the reserved garlic before serving.
