Roast carrot & radish salad

Delicious carrot salad pairs perfectly with BBQs and roasts.
Ingredients:
  • 6 carrots, peeled, halved crossways, then halved lengthways
  • 1 bunch rocket, trimmed, washed, dried
  • 125.00 ml fresh continental parsley leaves
  • 4 radishes, thinly sliced
  • 42.00 gm fresh orange juice
  • 36.40 gm extra virgin olive oil
  • salt and pepper
Instructions:
  • 1. Preheat your oven to 200°C. 2. Arrange carrots on a baking tray and coat them with olive oil spray. 3. Season carrots with salt and pepper. 4. Roast carrots in the oven for 35-40 minutes. 5. Allow the roasted carrots to cool for 10 minutes. 6. Combine rocket, parsley, and radishes with the roasted carrots. 7. Whisk together orange juice and olive oil to make a dressing. 8. Season the dressing with salt and pepper. 9. Drizzle the dressing over the salad before serving.
