Roast chicken and pesto

Elevate roast chicken with homemade pesto.
Ingredients:
  • 1.8 kg higher-welfare chicken
  • ½ bulb garlic plus an extra ¼ clove
  • 2 small lemons
  • a few sprigs fresh thyme
  • extra virgin olive oil
  • 3 bunches fresh basil stalks removed
  • 1 handful pine nuts lightly toasted
  • 50 g Parmesan freshly grated
Instructions:
  • Preheat your oven to 200ºC/400ºF/gas 6. Stuff the chicken with half a bulb of garlic, a lemon, and thyme. Season generously with salt and pepper, then rub with olive oil. Roast for 1½ hours. Check for doneness by piercing a thigh with a knife – juices should run clear. For the pesto, blend garlic, basil, pine nuts, Parmesan, olive oil, lemon juice, salt, and pepper until smooth. Adjust consistency with more olive oil if needed. Serve the chicken with the pesto on the side for dipping or drizzling. Enjoy!
