Create a flavorful one-pan meal by roasting chicken over angel hair pasta, using the pan drippings as a delicious pasta sauce.
Ingredients:
  • 1 pound angel hair pasta
  • 6 tablespoons olive oil, divided
  • 1 (15-ounce) can diced tomatoes with their juices
  • 1 teaspoon salt, divided
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper
  • 2 tablespoons chopped fresh oregano, divided
  • 2 whole chicken legs (thighs and drumsticks attached), on the bone (1 1/2 pounds total)
  • 2 large chicken breast halves, on the bone (1 1/2 pounds total)
  • 1 sprig fresh oregano, leaves removed, for garnish
Instructions:
  • Prepare the angel hair: Boil a pot of salted water until rapidly bubbling, then cook the angel hair until al dente, for about 4 minutes. Drain the pasta.
  • Prepare the baking dish: Coat a 9-by-13-inch baking dish with 1 tablespoon of olive oil. Transfer the pasta using tongs, creating small "nests" if desired. Drizzle 1 tablespoon of olive oil over the pasta and set aside.
  • Preheat the oven to 400°F.
  • In a skillet over medium high heat, heat 2 tablespoons of olive oil. Add the tomatoes, their juices, 1/2 teaspoon salt, 1/4 teaspoon black pepper, red pepper, and 1 tablespoon of oregano. Cook and stir for 3 minutes. Spread the tomato mixture over the nests evenly, leaving them partially uncovered.
  • Place the chicken on top of the nests, skin side up, and gently rub the skin with the remaining olive oil. Season with the remaining salt, black pepper, and oregano.
  • Roast the chicken in the oven until the meat thermometer reads 165°F when inserted into the thickest part of the breasts and thighs. Rest for 10 minutes before serving.
  • Prepare and present the chicken: Halve the chicken legs to form 2 thighs and 2 drumsticks directly in the dish. Cut the chicken breasts horizontally. Break the angel hair using a metal spoon or knife. Serve the chicken with some pasta from underneath. Top with fresh oregano leaves for garnish.
