Roast chicken with apple seasoning and cauliflower puree

"Roast chicken with flavorful stuffing, served with creamy cauliflower puree for a crowd-pleasing meal."
Ingredients:
  • 2 small (about 800g each) whole fresh chickens
  • 140g (2 cups) fresh breadcrumbs (made from day-old bread)
  • 1 medium (about 160g) pink lady apple, peeled, cored, coarsely grated
  • 100g thinly sliced prosciutto, finely chopped
  • 4 green shallots, ends trimmed, finely chopped
  • 40.00 ml chopped fresh lemon thyme
  • Salt & freshly ground black pepper
  • 800g cauliflower, cut into florets
  • 185ml (3/4 cup) chicken style liquid stock
  • 60ml (1/4 cup) dry white wine
  • Pinch of salt
Instructions:
  • Preheat your oven to 180°C. Rinse the chicken cavities thoroughly under cold running water, then pat them dry inside and out with paper towel.
  • In a large bowl, toss together the breadcrumbs, apple, prosciutto, green shallots, thyme, and garlic until well mixed. Season with salt and pepper to taste.
  • Distribute apple seasoning among chicken cavities. Secure openings with toothpicks, tie legs with kitchen string, and place in a roasting pan. Drizzle with oil, season with salt, and pepper. Roast in preheated oven, basting occasionally, until juices run clear when skewer is inserted into thighs, about 55 minutes. Rest, covered with foil, for 5 minutes before serving.
  • For the cauliflower puree, combine cauliflower, stock, and wine in a saucepan. Bring to a boil over medium-high heat, then simmer on medium-low for 10 minutes until cauliflower is soft. Remove from heat, then blend in a blender until smooth. Season with salt to taste.
  • ✦ Using sharp kitchen scissors, cut the chickens along each side of the backbone and discard them. ✦ Cut the chickens in half and transfer the seasoning to a bowl. ✦ Spoon cauliflower puree onto serving plates, place chicken halves on top, and sprinkle with apple seasoning. ✦ Serve immediately.
