Bacon-infused peas elevate this low-fat roast chicken dinner with a savory twist.
Ingredients:
  • 4 chicken breasts, trimmed
  • olive oil cooking spray
  • 10.00 gm reduced-fat margarine
  • 1 small red onion, finely chopped
  • 90g shortcut bacon, trimmed, chopped
  • 1 garlic clove, crushed
  • 750.00 ml frozen peas
  • 62.50 gm dry white wine (see note)
  • 500.00 ml mashed potato, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200°C. Gently coat the chicken with oil and generously season with salt and pepper.
  • Preheat a non-stick frying pan over medium-high heat. Sear chicken in two batches for 2 minutes on each side until golden. Transfer to a baking tray and roast for 7 to 8 minutes until fully cooked. Rest on a plate, covered, for 5 minutes before serving.
  • Heat margarine in a frying pan over medium heat. Saute onion, bacon, and garlic until golden, about 4 to 5 minutes. Stir in peas and wine, simmer for 2 minutes. Remove from heat and season with salt and pepper.
  • Thinly slice the succulent chicken and elegantly arrange on plates. Serve with a side of vibrant peas, flavorful potatoes, and zesty lemon wedges.
