Roast chicken with potatoes & carrots

Elevate your Sunday dinner with high-quality chicken for a simple and delicious family meal. Opt for RSPCA-Assured birds for best flavor.
Ingredients:
  • 500 g carrots
  • 600 g potatoes
  • 1 bulb of garlic
  • 5 sprigs of fresh rosemary
  • 1 x 1.6 kg whole free-range chicken
  • 1 lemon
  • 5 sprigs of fresh thyme
Instructions:
  • Preheat the oven to 220°C/425°F/gas 7. Prepare the carrots and potatoes and place in a roasting tray with garlic cloves and rosemary leaves. Season with salt, pepper, and oil, then mix well. Rub the chicken with salt, pepper, and oil, then stuff with lemon and thyme. Place the chicken on top of the vegetables and roast at 200ºC/400ºF/gas 6 for 45 minutes. Turn the vegetables and baste the chicken halfway through. Continue roasting for 30 more minutes or until the chicken is cooked. Rest the chicken, then carve and serve with the veggies. Enjoy with a side salad.
