Ingredients:
  • 280g slices lamb roast
  • 4 slices focaccia, halved
  • 165.00 ml Greek-style thick natural yoghurt
  • 1 Lebanese cucumber, chopped lengthways, seeds removed, chopped
  • 19.80 gm whole egg mayonnaise
  • 200g chargrilled capsicum, cut into thin strip
  • 1 bunch rocket, trimmed
  • 1 garlic clove, crushed
  • 1.25 gm ground cumin
  • 0.60 gm sea salt
  • pepper
Instructions:
  • Preheat grill to medium-high. Toast both sides of the focaccia on a baking tray until they are golden brown, about 2-3 minutes per side.
  • Combine cucumber, yoghurt, mayonnaise, salt, cumin, and garlic in a small bowl. Mix until fully incorporated. Season with pepper to taste.
  • Spread a generous amount of flavorful tzatziki on one side of each delicious focaccia slice. Layer on some fresh rocket, juicy lamb, and colorful capsicum. Finally, top each stack with another tempting focaccia slice and enjoy your mouthwatering creation.
