Elevate your dinner with succulent roast lamb and pillowy gnocchi.
Ingredients:
  • 1.1 kg boneless lamb leg in herb & mustard marinade
  • 400g can diced tomatoes
  • 500g pkt golden pasta potato gnocchi
  • 100g spinach leaves
  • 62.50 ml grated parmesan, to serve
Instructions:
  • Preheat the oven to 180C (160C fan-forced). Place the unwrapped lamb and tomatoes in an oven bag, seal it, and roast for 1 hr 15 mins until the lamb is tender. Transfer everything to a large bowl, cut the lamb into pieces, and return it to the sauce.
  • Prepare the gnocchi according to package instructions. Stir in the spinach and cook until just wilted, about 20 seconds. Drain well.
  • Combine the gnocchi and lamb mixtures together, tossing gently to blend. Serve topped with Parmesan cheese.
