Elevate your roast lamb with a gourmet twist of rosemary, garlic, and chili.
Ingredients:
  • 125ml (1/2 cup) extra virgin olive oil
  • 125.00 ml fresh rosemary, finely chopped
  • 6 garlic cloves, crushed
  • 4 small fresh red chillies, halved, deseeded, finely chopped
  • 2 1.25kg Easy Carve lamb legs
  • Olive oil, for greasing
  • Salt & cracked black pepper
Instructions:
  • In a large shallow ceramic dish, mix together oil, rosemary, garlic, and chili. Add the lamb legs and thoroughly coat them in the marinade. Cover the dish tightly with plastic wrap and refrigerate for a minimum of 2 hours or preferably overnight to marinate.
  • Preheat the oven to 180°C. Grease a 25 x 34cm roasting pan with oil. Season both sides of the lamb legs with salt and pepper. Place the lamb in the pan. Roast in the oven, basting every 15 minutes with pan juices and reserved marinade for 65 minutes for medium doneness.
  • Place the succulent lamb on a plate, gently cover it with foil, and allow it to rest for 15 minutes if serving promptly. Alternatively, let it sit at room temperature for 1 hour if preferred.
  • Carve the lamb and elegantly arrange on a spacious serving platter.
