Roast lamb with mint jelly glaze recipe

Family favorite succulent roast lamb.
Ingredients:
  • 1.5kg Lamb Shoulder Roast Bone In
  • 1 garlic clove, thinly sliced
  • 8 small oregano sprigs
  • 8 small rosemary sprigs
  • 120g jelly
  • 32.00 gm brown sugar
  • 23.40 gm Dijon mustard
  • 8 large Red Royale potatoes, thinly sliced
  • 1 brown onion, thinly sliced
  • 20g butter, melted
  • 1 garlic clove, extra, crushed
  • 20.00 ml thyme sprigs
  • 125ml chicken stock
  • Steamed vegetables, to serve
Instructions:
  • Preheat oven to 140°C. Score the lamb's surface with 8 small slits. Fill each slit with a garlic slice, oregano sprig, and rosemary sprig for added flavor. Position the lamb, fat-side up, on a clean work surface.
  • In a small saucepan over medium heat, melt the mint jelly with sugar and mustard, stirring constantly for 2 minutes until smooth.
  • In a large bowl, mix together potato, onion, butter, crushed garlic, and thyme, then season well. Spread the potato mixture evenly in a large roasting pan. Place the lamb on top of the potatoes. Brush the lamb with half of the mint jelly mixture. Pour stock over the potatoes. Cover the pan tightly with foil.
  • Roast the lamb for 4 hours until it's tender. Remove the foil and increase the oven to 220°C. Brush the lamb with mint jelly mixture and roast for another 30 minutes until the lamb is caramelized and the potatoes are golden brown. Let it rest covered loosely with foil for 15 minutes before serving.
  • Present the lamb alongside the potato mixture and freshly steamed vegetables.
