Marinated leg of lamb roasted with fragrant herbs and zesty flavors for a mouthwatering family feast.
Ingredients:
  • 1 teaspoon lemon zest
  • 0.25 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons prepared Dijon-style mustard
  • 1 teaspoon freshly ground black pepper
  • 5 pounds whole leg of lamb
  • 1 teaspoon coarse sea salt
Instructions:
  • Combine honey, garlic, rosemary, mustard, lemon zest, and pepper in a small bowl. Rub the mixture over the lamb in a flat dish. Cover with plastic wrap and let marinate in the fridge for 8 hours to overnight.
  • Preheat the oven to 450 degrees F (230 degrees C), then place the lamb on a rack in a roasting pan and season with salt to taste.
  • Preheat the oven and bake for 20 minutes, then lower the temperature to 400°F (200°C) and roast for an additional 55-60 minutes until medium rare. Use an instant-read thermometer – the center should register a minimum of 120°F (50°C). Rest the lamb for 10 minutes before carving.
