Roast parsnips, leeks, apples & bacon

Enhance your Sunday roast with delicious roasted root vegetables.
Ingredients:
  • 2 parsnips, peeled, trimmed, quartered
  • 2 leeks (white part only), halved, cut into 7cm lengths
  • 2 red apples, cored, each cut into 6 wedges
  • 30g unsalted butter, chopped
  • 8 rashers streaky bacon, rind removed
Instructions:
  • Heat your oven to 200°C.
  • Transfer parsnips, leeks, and apples to a baking dish. Top with butter, salt, pepper, and a drizzle of oil. Roast for 15 minutes. Add bacon on top and roast for an additional 10 minutes until veggies are tender and bacon is crispy.
