Roast pork with pistachio couscous stuffing

Savor slices of juicy roast pork with crispy skin and savory stuffing.
Ingredients:
  • 2kg rolled pork loin, rind scored
  • 4.80 gm sea salt flakes
  • 125.00 ml couscous
  • 125.00 gm boiling water
  • 9.20 gm olive oil
  • 1 garlic clove, crushed
  • 62.50 ml pistachio kernels, chopped
  • 20.00 ml chopped fresh sage leaves
  • 1 tsp finely grated orange rind
Instructions:
  • Prepare stuffing: In a heatproof bowl, combine couscous and boiling water, then cover and let it stand for 3 to 5 minutes until the liquid is absorbed. Fluff the couscous with a fork to separate the grains. In a frying pan over medium heat, sauté onion and garlic in oil for 3 minutes until onion softens. Add pistachios and toast for 1 minute. Combine the onion mixture with sage and orange rind in the couscous, mix well. Preheat the oven to 220°C/200°C fan-forced.
  • Remove the string from the pork and unroll it on a board with the skin-side down. Slice crossways through the thickest part of the meat without cutting through to the skin. Open up the pork to form one large piece. Press the stuffing over the pork and roll it up to enclose the stuffing. Tie it with kitchen string at 3cm intervals to secure it. Rub the pork with oil and sprinkle with salt before placing it in a large roasting pan.
  • Roast pork at a high temperature, then lower heat. Continue roasting until pork is cooked through, juicy, and tender. Rest covered before serving.
