Elevate your roast pork with flavorful roasted chestnuts for a special touch, perfect for special gatherings.
Ingredients:
  • 1.6kg rack of pork
  • 60ml (1/4 cup) olive oil
  • Salt & freshly ground black pepper
  • 20 fresh chestnuts
  • 20 (about 1 bunch) fresh sage leaves
  • 20g butter
  • 2 (about 135g each) pink lady apples, cored, cut crossways into 1.5cm thick slices
  • 1 red onion, halved, thinly sliced
  • 185ml (3/4 cup) port
Instructions:
  • Preheat the oven to 220°C. Put the pork in a roasting pan and evenly drizzle with 1 tablespoon of oil. Season with salt and pepper. Roast in the hot oven for 30 minutes until the pork starts to brown. Lower the oven temperature to 180°C and continue cooking for 1 hour and 20 minutes until the pork is golden brown.
  • Make a small cross at the base of each chestnut. Roast them on a baking tray in a preheated oven for 20 minutes until fragrant. Let them cool slightly wrapped in a tea towel for 5 minutes. Peel off the shells and light brown skin, then set aside.
  • In a large frying pan over medium heat, heat the remaining oil. Add sage leaves and cook until crisp, about 30 seconds. Transfer to a plate lined with paper towel using a slotted spoon.
  • Melt butter in the frying pan until foamy. Cook apple slices for 5 minutes, stirring occasionally, until golden and tender. Transfer apples to a plate using a slotted spoon, cover with foil, and set aside.
  • Place the onion in the frying pan and sauté for 5 minutes until softened, stirring occasionally. Then add apple slices, chestnuts, and sage leaves. Gently mix until warmed. Season with salt and pepper to taste.
  • 1. Take out the pork from the roasting pan. Strain the juices into a heatproof jug and skim off any excess fat with a metal spoon. Place the pan over medium heat, then add port and pan juices. Simmer and stir with a flat-bottomed wooden spoon for 5 minutes until the sauce thickens and reduces by half. Season with salt and pepper to taste.
  • Arrange the pork on a plate with the apple and chestnut salad. Drizzle with the delicious port sauce and serve promptly.
