Roast potatoes with paprika and cumin

Spiced roast potatoes topped with smoked paprika, cumin, and fresh coriander.
Ingredients:
  • 16 small red-skinned potatoes, halved
  • 18.20 gm olive oil
  • 9.60 gm sea salt flakes
  • 3 tsp cumin seeds
  • 5.00 gm smoked paprika
  • 1 tsp fennel seeds
  • 2 garlic cloves, crushed
  • 62.50 ml coarsely chopped coriander
Instructions:
  • Preheat oven to 220C. Boil potatoes in salted water until just tender, about 5 minutes. Drain and let cool for 10 minutes.
  • In a large bowl, mix together the oil, salt, cumin, paprika, fennel, and garlic. Season with freshly ground black pepper, then add the potatoes and toss to coat evenly.
  • Prepare 2 baking trays with baking paper. Spread the potato mixture evenly on the trays. Bake in the oven, rotating occasionally, for 20 minutes until crispy and golden. Transfer to a serving bowl, garnish with coriander, and serve promptly.
