Savor the delicious blend of sweet pumpkin flavor and crispy texture in this savory crumble.
Ingredients:
  • 2.2 kg Butternut pumpkin, peeled, cut into 2cm pieces
  • 36.40 gm olive oil
  • 1/2 tsp dried chilli flakes (optional)
  • 90g (1 cup) rolled oats
  • 75g (1/2 cup) plain flour
  • 16.00 gm brown sugar
  • 2 tsp chopped fresh rosemary
  • 1.25 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 75g butter, chopped
  • 40.00 ml pine nuts
  • 40.00 ml pepitas
  • 2 spring onions (shallots), thinly sliced
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with parchment paper. Spread pumpkin pieces on the tray, drizzle with oil, sprinkle with chili flakes, season well, and mix everything together. Roast for 30 minutes, stirring once, until the pumpkin is golden and tender.
  • Grease a 1.25L (5 cup) baking dish. In a large bowl, mix oats, flour, sugar, rosemary, cinnamon, and nutmeg. Use your fingers to rub in the butter until the mixture looks like coarse breadcrumbs. Add pine nuts and pepitas, then season to taste.
  • Lower the oven temperature to 180°C. Mix in the spring onion into the pumpkin mixture, then transfer it to the prepared baking dish. Sprinkle the crumble mixture on top. Bake for 25 minutes or until golden and crisp. Let it stand for 5 minutes before enjoying.
