Roast pumpkin hummus

Try our delicious and nutritious homemade hummus with a sweet pumpkin twist and authentic tahini for the perfect snack.
Ingredients:
  • 250g pumpkin, peeled, cut into small pieces
  • 400g can chickpeas, rinsed and drained
  • 48.00 gm tahini
  • 21.00 gm lemon juice
  • 2.50 gm ground cumin
  • 1 garlic clove, crushed
  • 40.00 ml fresh coriander, chopped
Instructions:
  • Lay the pumpkin on a lined baking tray, give it a good spray of oil, and roast at 180C for about 25 minutes until beautifully golden.
  • Add the roasted pumpkin, chickpeas, tahini, lemon juice, ground cumin, and garlic to a food processor. Season with salt and pepper, then blend until smooth. Finally, fold in some fresh coriander.
