Ingredients:
  • 700g rhubarb
  • 1 large orange, juiced
  • 8.80 gm vanilla essence
  • 40.00 gm caster sugar
  • 0.63 gm mixed spice
  • 1 small tub low-fat frozen yoghurt, to serve
Instructions:
  • Preheat your oven to 180°C. Slice the rhubarb diagonally into 3cm pieces and place them in an ovenproof dish. In a jug, mix together the orange juice, vanilla essence, sugar, and mixed spice, then pour the mixture over the rhubarb.
  • Seal with a snug lid or foil and bake for 20 minutes. Uncover before serving.
  • Continue baking for an additional 10 minutes, or until the rhubarb is soft. Enjoy warm with a scoop of frozen yoghurt.
