Roast sweet potato with Cajun-spiced butter

Roasted whole sweet potatoes paired with BBQ meat, a perfect southern side dish.
Ingredients:
  • 4 small (about 200g each) sweet potatoes, washed
  • 60g butter, at room temperature
  • 10.40 gm milk
  • 3.75 gm Cajun Seasoning
  • Fresh coriander sprigs, to serve
Instructions:
  • Preheat the oven to 200°C. Drizzle the sweet potatoes with oil and wrap each one in foil. Roast on a tray for 45 minutes or until they are tender.
  • In a food processor, blend the butter and milk until soft and light in color. Incorporate the seasoning and blend until fully combined.
  • With a small sharp knife, gently cut a lengthwise slit on the top of each sweet potato. Fill them generously with the flavorful butter mixture and garnish with fresh coriander sprigs.
